DO: Priorat

CLASSIC Priorat comes from wineries, situated in Torroja and Gratallops, DOQ Priorat, at 500 meters above sea level, the vineyards feature slatey soils with minimal rainfall. The challenging 2021 vintage, marked by 650mm of rain, demanded meticulous vineyard care due to mildew and marked by low production. With an average age of 25 years, the organically farmed vineyard yielded around 3,500kg/ha. The manual and selective harvest occurred in early September 2021. In the cellar, destemmed grapes underwent a three-week maceration with periodic punch-downs. Fermentation, utilizing indigenous yeasts, transpired in stainless steel tanks. The 15-month aging process involved both stainless steel and used French oak barrels, with malolactic fermentation occurring in the latter. The wine was gently filtered before bottling.
